Unbelievably Outrageous Apple Pie Recipes

So many of us have fond apple pie memories, gathering together with family or friends at holiday dinners to enjoy a warm homemade treat. Flaky crust, gooey apples, and sweet-smelling spice combine for the perfect fall dessert.

You can enjoy one whenever you like with any number of classic, reliable apple pie recipes. Heck, if you’re too busy to bake, Carter Mountain Orchard’s Country Store and Chiles Peach Orchard’s Farm Market have pies ready for pickup! Baked fresh with seasonal apples and available whole, halved, or by the slice, our scrumptious pies are traditional, just like you’d expect.

Some exploratory bakers are taking apple pie recipes further. From patently absurd to potentially genius, some of these pies made us laugh out loud, and others made us think. After all, with the right apples and the right crust, can you really go wrong with an apple pie? We’ll let you be the judge!


Mile-High Apple Pie

Look at this absolute giant! The mile-high apple pie, besides being fun to say, is as much a feat of engineering as baking. The trick is to somehow fit all those liquid-heavy apple pieces under a crust without bursting, leaking, or making an air pocket. There are a number of different origin stories and variants on this eye-popping pastry recipe from Sugar Hero, and just as many techniques for managing it without making a mess.

With smart tricks like the “bowl method,” the mile-high apple pie is more achievable than it looks and brings the “wow” factor to family gatherings. Let’s just hope folks are hungry enough to eat all that pie!

One thing’s for sure: you’ll need a lot of apples.

According to her recipe, Elizabeth Labau took her family apple-picking out west and used an entire five-pound bag of Winesap apples in just one 9-inch pie!

So if you’re planning to pick your own apples at Carter Mountain Orchard and worry you’d end up with more fruit than you know what to do with, this might be the apple pie recipe for you.

There are plenty of tasty ways to use lots of apples, though!


Double Apple Pie

If you just can’t get enough of apple flavor, this pie doubles down on it with a sweet, creamy filling. The recipe isn’t for a pie within a pie (as cute as that would be)—it’s actually referring to two apple ingredients in one pie. In this case, Melissa Clark’s New York Times recipe recommends using apple butter to sweeten the apples in your pie.

To really push the envelope, take this recipe even further by making a triple or quadruple apple pie with apple cider vinegar, apple cider jelly, or even apple sauce.

Apple Butter Pie

If you’re a fan of both apple and pumpkin pie, why not enjoy the best of both worlds? This Tastes of Lizzy T recipe from Julie Clark replaces pumpkin puree with apple butter to make a soft, golden-brown pumpkin pie lookalike with a rich apple taste. Simple and clever, this pie is sure to surprise and delight Thanksgiving guests who take a bite, especially if they haven’t been told what to expect!

The filling is a little finicky and needs high fat milk or cream to really get the texture right. Otherwise, this is a straightforward apple pie recipe worth trying for the novelty of it. Carter Mountain’s apple butter fits perfectly in this recipe, leaving plenty to enjoy as a spread on toast or crackers!

Apple Hand Pies

From mile-high heights to adorable handheld bites, apple pies come in all shapes and sizes! This eye-catching apple hand pie recipe comes from Heather Baird at Sprinkle Bakes, who’s managed to shrink pies down from centerpiece deserts to snack-sized morsels. She even paired them with homemade caramel dipping sauce. Make no mistake, these things are dangerous—how could you have just one?

Smaller pies require smaller chunks of apple, diced tiny to bake faster. Her lovely latticework is achieved through a unique mold or could be done the old-fashioned way.

Apple hand pies serve great on their own, though making a bunch for a large gathering requires a lot of work. Consider pairing them with other fall treats, like the apple cider donuts and apple caramel crisp cookies you can pick up at Carter Mountain Orchard, for a decadent dessert buffet!


Shredded Apple Pie

Life in the Lofthouse’s recipe brings us this fascinatingly simple twist on an apple pie, opting to shred the apples through a cheese grater rather than dice them. The result? An easy, quick recipe with a melt-in-your-mouth softness and that beloved apple pie flavor. With its quirky look, the shredded apple pie is a contender for a new holiday tradition.

Still, for many purists, an apple pie needs an outer crust, which this recipe doesn’t call for. Crust debates are as old as pie itself: one compromise to avoid tweaking the recipe too much is a crumbly topping baked onto the pie.

Sometimes, all you need to round out a good dessert is a tasty crumble to top it off. Shredded apple pie bakers can simplify this recipe even further by adding our apple crisp mix on top. It’s just the thing to add a crunchy top layer to a pie that’s missing it!


Deconstructed Apple Pie

Okay, this is getting a bit silly. This Lakeside Table recipe produces an elegant, beautiful, delicious-looking dessert. Is it still a pie, though? Well, whether it is or not, this “deconstructed” apple pie recipe certainly caught our eye!

Baked apples are a quick and easy treat that’s lighter and healthier than a whole pie. Each type of apple has a different flavor that comes out when baked, both in and out of a pie.

Chiles Peach Orchard Closed for the 2021 Season

That’s a wrap! Thank you for another incredible season of welcoming visitors from near and far to our orchard for wholesome family fun.

As we close our doors for the winter, we’re fondly remembering the highlights from the 2021 season.


Season’s Pickings

From spring strawberries to fall pumpkins and apples, there sure were plenty of pickings this year! There’s no doubt that summer’s bounty was the star.

We could hardly pick our blueberries and peaches fast enough! While blueberries were late to the party in early June, they held on for a long season and made it through the end of July.

Peaches also started out strong in June and held on ‘til the end of September. In fact, they got some well-deserved attention from Wine & Country Magazine.


Giving Back

This year, we committed to donating our tips to Meals on Wheels of Charlottesville/Albemarle as a heartfelt “thank you” for all that they do. The result? We raised over $5,000! That translates to over 900 meals for Meals on Wheels clients. 

Thank you so much to all who contributed this summer!

We unveiled our new look in May with refreshed logos and a fabulous website update! Leading up to the opening of our new venue, we undertook the family endeavor of unifying each of our locations’ logos with one consistent “C”.

Raising A Glass

2021 was the year of wine for the Chiles Family Orchards community. While we’ve been harvesting grapes for generations, this year marked our entrance into the world of winemaking.

In early June, we released our Carter Mountain Wine label. We are so grapeful to enjoy the fruits of our labor with such delicious Virginia wines!

The Wine Shop at Chiles Peach Orchard opened in early June and features seven different wine varieties. 

Welcoming Chiswell to the Chiles Family

The wine fun doesn’t stop there—we also opened Chiswell Farm & Winery in November! This adults-only venue is just a hop, skip, and a jump away from the orchard, making it a peaceful escape for wine sippers and connoisseurs alike.

The winery will be open afternoons through the winter, including New Years’ Eve and Day to ring in 2022! Please note that Chiswell will be closed on Christmas Eve and Day.

Carter Mountain Orchard Will Be Open Weekends This Winter

Orchard Outlook for 2021

For the first time ever, Carter Mountain Orchard will be open to the public throughout the winter, Fridays–Sundays!* We’ll close if the weather forecast looks iffy; we’re not taking any chances with safety. PLEASE NOTE: tickets/reservations are NOT required!

*The Bold Rock Taproom will remain closed.

In the past, the orchard has closed at the end of December and reopened around Easter. You can now enjoy the crisp air, fresh cider donuts, and our spectacular mountain views all year long.


A Look Back at 2020

This year was one for the history books and we couldn’t have gotten through it without the support of our community and amazing staff. We’re so grateful to everyone on team Chiles Family Orchards for their hard work, perseverance, and overall awesomeness. 

At this point, March seems like a million years ago. Here’s a look back at the Carter Mountain Orchard 2020 highlights.

April

The uncertainty in April delayed our season-opening and postponed a ribbon cutting with Sigora Solar. Hopefully, we’ll be able to celebrate our new solar panels and ongoing commitment to sustainability in 2021.

May

New times called for new service offerings. We opened a drive-thru at the Country Store pavilion and the new Ivy Road Pop-up.

June

The Virginia sun-ripened some tasty peaches for peach picking season and set beautifully behind the mountains for gorgeous Wind Down Wednesdays and Thursday Evening Sunset Series. But the sun can be a fickle friend; it also hid behind plenty of clouds, causing us to cancel events due to rain. 

July

In July, we introduced your new favorite summer snack: peach sliders. The slice of fresh peach sandwiched in a cider donut topped with powdered sugar was an explosion of sweet flavors.

August

The Mountain Grill provided one of the best outdoor dining experiences in Charlottesville. With a delicious Americana menu featuring fruits and vegetables from our orchards, stunning views of #Charlottesville and the surrounding mountains, and sanitized, spaced picnic tables, it was a win-win-win.

September

Apple season looked a little different this year. To control crowd size, we started ticketing for in-person visits and opened a new scenic drive-thru.

Carter Mountain Orchard was voted #7 in the nation on USA TODAY’s “Best Apple Orchards” (2020) list!

November

We partnered with Quirk Hotel Charlottesville to give apple pies to first responders at Charlottesville Fire Department (CFD) on Ridge Street.

December

It’s a bummer that Santa has to quarantine at the North Pole this year but our gift guide made shopping local merry and easy.

Chiles Peach Orchard Closed for 2020 Season

How could any recap capture what a crazy year it’s been? We’ve never been more grateful to be able to welcome visitors out to the orchard for some outdoor family fun. 

As we close our doors for this season, we’re reflecting on all that has happened during 2020.


COVID-19 delayed our season opening and brought about a new way of doing things. We introduced a drive-through service in early April for a quick and safe way to deliver fresh Chiles Family Orchards produce and goodies from our farm to your bellies.

The new Ivy Road Pop-up is a convenient pickup point for our produce, cider, and, of course, apple cider donuts.

Strawberries started in late April but cooler than normal temperatures throughout the spring made them slower to ripen. Boy were those red, ripe strawberries worth the wait!

Summer’s bounty was particularly delightful this year, filling our Farm Market with sunflowers, zinnias, asparagus, tomatoes, blueberries, cherries, peaches, apples, and pumpkins.

Our outdoor events, the Orchard Jams concert series and Come Grow with Us summer children’s program, provided some much-needed (COVID-compliant) fun.

We’re a family business and that family includes our amazing staff. We couldn’t do it without them!

Whether we could see them or not, we loved cultivating so many smiles and can’t wait to welcome everyone back next year!

Chiles Family Orchard News & Winter Updates 2019

We have been busy bees over the winter and have a lot of things to share with you!

There’s no shortage of things to do—that’s for sure! From renovations to food safety classes to picking out new products to rewriting company manuals, you name it, it all happens over the wintertime.

This year we’ve had a lot of renovations done at Chiles Peach Orchard, including the finalization of our new solar panels, a brand new pavilion for events and to add a little extra shade in the summertime, and rebuilt the barn in the vegetable patch. During this downtime we have also repainted the floors inside the market, laid new grass seed around the market, and are working on a bathroom spiff-up!

The wintertime is all about ‘beautification’ and learning.

Staff at both orchards partook in Food Safety and CPR classes, and updated our employee handbooks and training manuals. In addition, we have also rewritten our school field trip curriculums to include our newest adventure: Solar Power!

This year Lisa and other team members attended gift shows in Atlanta to pick out new and exciting products for our market. With these products starting to roll in, we have also remodeled the inside look of the market for cleaner, brighter displays of our goods!

Another manager at Chiles Peach Orchard, Stephanie, helps us with new and exciting products for the market as well! She spends the winter months hand-making candles in our kitchen! Each season she comes up with new and exciting scents that are completely one of a kind!

In addition to gift shows, our managers also spend time traveling to other farms across the country with similar visions to ours.

“This is the greatest tool,” Carter Mountain manager Brian Ball explains, “By having the opportunity to see how other farms are run and how they operate, it really helps us improve our systems here and gives us tons of new ideas.”

As for what’s happening in the field, Farmer Henry has plenty to say this year.

“The biggest things are planning, pruning, and replanting,” He explains, “We have to do a lot of this in the winter to stay ahead in the springtime. We have to plan out our vegetable garden at Chiles Peach Orchard, go over last year’s notes, and decide which vegetables to keep replanting and which to scale back on in order to introduce new vegetables.”

This year Farmer Henry says there will be some new veggies coming! New varieties of sweet corn, new varieties of green beans, and new varieties of semi-hot peppers! He also says to be on the lookout for new varieties of flowers in our flower garden!

The pruning is done throughout all of our orchards, and this is done to help keep trees to size and also helps with thinning later on in the season. What happens to all the branches once they’re thinned?

“We put all of our clippings into a mulcher, then distribute that into the rows of trees,” Farmer Henry explains, “That way we create our own mulch that can then later return to the soil.”

As for replanting, “We make notes throughout the season of weak, dead, or dying trees so we can go ahead and get them out and make room for new healthy plants in the spring.” He says.

Going hand-in-hand with replanting, Farmer Henry explains that we need to make sure our soil is happy and healthy.

“We take soil samples from everywhere around the orchards and send it off to Virginia Tech to be tested for us. These tests tell us which nutrients our soil might be lacking, which then tells us what kinds of supplements we need to add, and exactly where to add them.” Pretty cool, right? Who knew!

Farmer Henry along with father Huff Chiles, and grandfather Henry Chiles, partake in various fruit and vegetable conferences across the United States. These conferences attract a wide range of industry leaders that come together and share equipment and knowledge with each other in order to better farming as a whole. These conferences are full of old friends and new, younger generation farmers to help keep our industry strong and thriving.

This year, Farmer Henry and mother Judy Chiles had the exciting opportunity to visit our nation’s Capital to lobby for better government practices when it comes to regulating agriculture and farmland. Together with other farmers, we hope to make a positive difference in our industry!

To wrap it all up, (like our strawberries currently are), we have had a very productive winter this year! Be on the lookout for new products, new logos, new varieties of veggies, fruits, and flowers, and most importantly: be on the lookout for an action-packed, fun-filled year with us here at Chiles Family Orchards!

Chiles Peach Orchard Closed for 2018 Season

To all of our visitors, thank you for a wonderful year.

While 2018 wasn’t without its challenges—heavy rains impacted many of our crops, especially strawberries—any year that our family can welcome your family to the orchards is a good year.

Closed for 2017 Season

We’re hibernating ’til March 30, 2018

Thanks to all for a great year at Carter Mountain! From annual events, like our “Eggstravaganza” and Peach Festival, to new programs like Cultivating Curiosity, to expanding the Mountain Grill to feed all those hungry Outsiders, we’ve had our work cut out for us—but that’s just how we like it.

We’ll be back next year with all of your favorites: pick-your-own fruit, Thursday Evening Sunset Series, tasting rooms, and more. In the meantime, have a happy holiday season, from our family to yours.

Closed for 2017 Season

What a year at Chiles Peach Orchard! We opened earlier than ever and Hopped Into Spring, kicking off a season full of new traditions, like Orchard Jams and weekly Pancake Breakfasts, and old, like our Homemade Peach Ice Cream Days and Pancake 5k.

After a month of S’more Holiday Fun, we’re closing up shop. But don’t fear: we’ll be back at it in the Spring! ‘Til then, have a joyful holiday season, from our family to yours.
